DescriptionThis low-carb "dessert" bread tastes like peanut butter and jelly. Peanut butter provides the peanut taste, while cherries (or other berries) provide the “jelly.” For anyone wanting to avoid peanuts, almond or sunflower seed butters work well, too.

As its name suggests, this bread tastes like peanut butter and jelly. Peanut butter provides the peanut taste, while cherries (or other berries) provide the “jelly.” For anyone wanting to avoid peanuts, almond or sunflower seed butters work well, too.
The fruit, peanut butter, and almond meal yield a net carbohydrate load (“net” carbs, i.e., digestible carbohydrates minus fiber) of about 66 grams for the entire loaf. If cut into 12 slices, this yields 5.5 grams carbohydrate per slice. For the especially carb-sensitive, carbohydrate load can be reduced by reducing the amount of fruit used to 1 cup and reducing the amount of peanut butter to ¾ cup; total carbohydrate load of the entire loaf would be 52 grams, or 4 grams per slice.
