Hello all,

I’m the pickiest eater you’ve ever met. :-) When I was a kid, my mom used to say that she was going to send my spit somewhere to "get tested." As an adult, I discovered what is really happening: I am a super taster. (You can get kits on Amazon now... an interesting n=1 experiment.) And severe.

This has made attempting to change my dietary habits... extremely challenging. There is simply very little that I like, especially in the vegetable realm. I can sneak greens into smoothies and some pureed things into pasta sauce, but to eat an entire salad? Fill half of my plate with sauteed spinach and peppers? Not happening. I’m nearly 50, so after almost 30 years of attempting all kinds of ways to force myself to change my tastes, I have little hope on that end.

My typical meals before attempting to move toward low carb involved meat, starch in various forms, fruit, dairy. I could eat sandwiches every day until the end of time.

My 50th birthday is in 6 months, and my gift to myself is joining this community and seeking a way forward where I am working toward vibrant health AND still enjoying my food. 

I’m very happy to eat eggs/meat, smoothies with berries/half and half/protein powder, etc. but when it comes to dinners I’m really missing that starchy side. And baking with almond flour has been... very hit or miss. 

I’d truly appreciate any insights, ideas, favorite recipes, or advice you could pass my way.
