I gave up on raw potato as an ingredient in my prebiotic shake because I didn’t like the taste or the grainy texture (and this is in a Vitamix).  Since I can’t ever find green bananas, even when I ask about backstock, I’m giving potatoes another try.

If you don’t use the entire potato, how do you store the remainder?  In water in the fridge?  I tried freezing in chunks like green banana.  Those babies are HARD, harder than ice cubes.  I was afraid for the Vitamix!

Another good trick is to slice them thin like potato chips and throw them in a ball jar with your preferred vinegar, put em in the fridge and their available when you get the urge. You could even try fermenting them.

Thanks guys.  Don’t know why I didn’t think of treating it like the avocado.  I know it’s the oxygen in the air that browns them.  When I still ate potatoes, I’d always cut them into a bowl of water to keep ’em fresh.

I envy those that can tolerate raw potato. It’s a perennial problem for me. It triggers bad skin itching and rash a day or so later

A friend told me she just slices and salts them and eats them all the time.    I tried it and liked it.  They’re crisp and you can eat with hummus or egg salad .

Yes, Naomi!  I thought I was the only one who likes raw potato.  I sometimes cube them up and then roll them in different spice blends and salt.
