As the title proclaims this bread/cake is to die for. I made it three times and was spectacular each time...moist, cake-like feel, and very tasty...even my kids liked it. I found it needed to bake for just over an hour, picture is from me:

Easy Keto Blueberry Bread - Low-Carb Recipe

This Keto Blueberry Bread is a low carb bread, perfect as a great breakfast or for a quick snack in between meals. This fantastic blueberry bread is gluten-free, grain-free and also sugar-free.

Ingredients

  • 5 eggs medium

  • 2 cups almond flour

  • 2 tbsp coconut flour

  • 1/2 cup blueberries

  • 1 1/2 tsp baking powder

  • 3 tbsp heavy whipping cream

  • 1/2 cup Erythritol

  • 3 tbsp butter softened

  • 1 tsp vanilla extract

Instructions

  • Preheat your oven to 350°F /180°C. Grease an 8.5 x 4.5-inch loaf pan with butter or line it with parchment paper.

  • In a bowl add the eggs, sweetener, vanilla extract. Using a mixer, mix for 2-3 minutes or until the eggs look frothy.

  • Add the heavy whipping cream and mix again.

  • Combine the dry ingredients in a different bowl: the almond flour, baking powder, and coconut flour.

  • Combine the wet and the dry ingredients using the mixer. Add the butter and continue mixing.

  •  Fold in the blueberries and then transfer the batter to a loaf pan.

  • Bake for about 45-50 minutes at 350F or until cooked through (it should pass the toothpick test).

  • Let it cool down and enjoy.

Notes

For the best results, when baking with almond flour use the super fine one. Different brands have different textures. You know it’s baked when you poke it with a toothpick and comes out almost clean with a moist crumb or two but with zero uncooked batter

Thanks Fitness, wow you posted that twice...I think you really need to make some for yourself : )

I used Lakanto monk fruit for the sweetener, and you can vary the amount to taste.

Bari, you could save this page as a favorite on your pc, or you could highlight the recipe, sans picture, copy and paste into a word processor app like MS Word, then print.
