We haven’t bought mayonnaise for years but we eat it almost daily.  It’s our favorite condiment.  We have tried many recipes, but we now always use the following recipe from the book Eat Rich Live Long by Ivor Cummins & Jeffry Gerber, MD.  It is simple, fast and great tasting.  I mentioned it in Dr. Davis’ weekly meet up and he asked me to post it in a forum.

2-Minute Homemade Mayonnaise 
1 large whole egg
1/2 tsp fine sea salt
1/2 tsp ground mustard
2 T fresh lemon juice or white wine vinegar
1 C avocado oil (our favorite), macadamia oil, or light olive oil

Place all ingredients into a large mug or widemouthed mason jar, big enough for an immersion blender to do its work. (The blender needs to be able to reach all the way to the bottom of the mug.)

Place the immersion blender into the mug and pulse while moving the blender up and down.  Within seconds you’ll have a smooth, creamy mayonnaise.

Remove the mayonnaise from the mug and store in an airtight container in the refrigerator for up to 1 week.

I just made this recipe, using a farm fresh egg and lemon juice.  Two thumbs up (for taste and ease)!
